Wash and cut the vegetables and the strawberries into a large dice. Add salt and 1 tablespoon of apple vinegar and olive oil with a pinch of mineral water.
Blend all ingredients together in a blender or food processor until reaches a homogeneous texture and strain through a fine mesh sieve. Once it´s strained, let it rest for a couple of hours in the frigde.
Serve in chilled bowls and garnish grated cheese on top.
