Mix the flour with 1 tablespoon of salt, the butter and the egg until you get a soft dough. Make sure the dough doesn´t stick to your hands.
Stretch the dough with a rolling pin into a ½ inch thick round. Now press the dough into a floured pie or tart mold. Cook in the preheated oven at 350ºF for 5 to 7 minutes. Let cool.
For the filling:
Fry leeks for about 3 minutes with a pinch of butter and olive oil until softened. Then add the peeled shrimp and cook until they just turn pink, about 30-60 seconds.
In a bowl mix a beaten egg, with a cup of cheese or milk, now add the cooked leeks, the shrimp, salt, pepper and some grated cheese.
